Looking For A Cookbook Refresh….Half Baked Harvest!

Some years ago our daughters introduced us to the Half Baked Harvest cookbooks and website of food blogger Tieghan Gerard. We were hooked! Thank you daughters! It truly is one of our go to cookbooks when we need some meal & kitchen inspo. For all you home cooks out there you are going to want to take a peek at these wonderful cookbooks!

We both subscribe to Half Baked Harvest website and every Sunday we get a wonderful post with new recipes. If you subscribe you will also receive a daily recipe update. We get so excited to read what new recipes she has concocted! Meal planning can be difficult and trying to figure out what to make for dinner every night gets like…..UGH! Drudgery! This is when you dive into one of Tieghan Gerard’s cookbooks and figure it out!!

We have made many of the recipes from the Half Baked Harvest cookbooks and from the blog on her website- Half Baked Harvest. We’d love to share them with you. On the website, there is a link- My Recipe Box. Click on this link to create an account- simply add your name and email address. When you find a recipe you just have to try, click “Save to My Collection” and it will automatically save the recipe to your recipe box! This will save you from having to scour this website for that yummy breakfast casserole you made last Christmas and can’t locate! Easy Breezy! We have not tried this yet but you can generate a shopping list for that specific recipe also.

Half Baked Harvest

Half Baked Harvest features many different recipes ranging from comfort food to healthy but yet indulgent recipes. Many of the recipes are perfect too if you are cooking for a big family. HBF cookbooks feature a hearty mix of salads, main dishes, side dishes and dessert recipes. Let’s break down what some of our favorite recipes are by category!

Breakfast

Maple Banana Bread With Cinnamon Spice Butter

So very yummy and a breakfast bread that is truly all about fall!!

Berry and Cream Cheese Croissant Bake

This dish is the spotlight on the menu for breakfast the day after Christmas at Val’s house. The whole family really loves it and they look forward to enjoying it year after year! The mix of yummy croissants, berries and cream cheese is scrumptious!

Simple California Omelet

Fresh and healthy ingredients may make this your go to omelet. This recipe contains oil packed sun dried tomatoes, gruyere cheese, fresh corn, fresh avocado and crispy bacon gives this omelet incredible flavor!!

Appetizers

Mexican Street Corn Dip

Easy to make and oh so delicious! Sweet corn paired with chili powder, cream cheese and mayo served as a dip with grilled corn, spicy chili powder and cotija cheese melted on top makes it a winner!

Tomato Burrata Pepperoni Pizza Dip

Who doesn’t like pizza?? This dip will please all the pizza lovers in the room when you are entertaining! Think about tailgate parties…this would be a perfect dip to serve!

Five Ingredient Beer Bread

We know this isn’t an appetizer but we just had to showcase it. Easiest bread to make and absolutely delicious! Honestly, this is one of Val’s favorite recipes!

Salads

Autumn Harvest Honeycrisp Apple and Feta Salad

Perfectly wonderful salad for all the upcoming holidays. This recipe has a hearty mix of spicy baby arugula, honey crisp apples, pomegranates, candied nuts and crispy prosciutto topped with an apple cider vinaigrette! If you do not care for arugula just use romaine lettuce instead!

Greek Chicken Orzo Salad

This is a nice salad to make for dinner. If you don’t want to prepare a full course dinner this recipe fits the bill and it is delicious!

Sesame Ginger Orange Salad

Refreshing and so crunchy! This Asian inspired salad features fresh greens, chicken, avocado, sweet oranges, nuts and wonderfully crunchy wontons! The dressing is what pulls it all together and will make this salad one the you will continue making year after year!

Main Dish

Easy Chipotle Salmon Burgers

Salmon is always good but creating a salmon burger with chipotle seasoning is absolutely brilliant! We love burgers so much this was a no brainer as far as picking a main dish we like from the HBH cookbooks. The salmon is seasoned with chipotle, pan fried until crispy with Havarti cheese, and put in a toasted brioche bun!

Baked Crunchy Pretzel Honey Balsamic Chicken

Absolutely love crunchy chicken and the combination of these flavors is great!

Greek Chicken Tzatziki Bowl

Easy to make and will be a go to recipe for years! Bev actually made this for book club. Everyone loved it because you can choose from all these delicious ingredients only those items you like!
