Are you a snacker throughout the day? Do you like to find great tasting snacks for your family and guests? Snacks help you keep full until your next meal and satisfy cravings-most of the time. When the summer weather starts heating up, a refreshing snack is preferred. Refreshing snacks are ideal for summer for several reasons- hydration, their cooling effect, lightness and ease of digestion and how nutrient rich they can be with fresh vegetables and fruit. Today we are sharing a round up of delicious snacks that we have made or would be a great choice to put together for yourself or any guest you host.

Hummus With Chopped Veggies

Hummus with Chopped Veggies is such an easy snack to put together. Everything is store bought- all you need to do is chop and assemble.

Ingredients

Hummus- 2 cups | Chopped Kalmata Olives | Chopped Cucumber | Chopped Cherry Tomatoes

Crumbled Feta Cheese | Pita Chips

Instructions

In a shallow serving dish, spread the hummus on the bottom of dish. Sprinkle chopped olives, chopped cucumber and chopped tomatoes on top. Sprinkle crumbled feta cheese on top. Place serving dish on a platter and surround with pita chips.

Antipasto Skewers

Antipasto skewers are easy to assemble and easy to adapt to anyones preferences. Make sure you have skewers on hand that are sturdier- key point.

Ingredients

Black Olives | Cooked Tortellini | Salami cubes | Cherry Tomatoes | Basil Leaves | Mozzarella | Parsley |

Green Olives | Quartered Artichoke Hearts | Proscuitto Slices | Balsamic Glaze | Graza Drizzle Oil

Instructions

Soak the antipasto skewers to prevent splinters while assembling. Gather the ingredients that you prefer and assemble each skewer. Arrange each skewer on a platter large enough for the total amount. Drizzle with Graza Drizzle Oil and Balsamic Glaze. Click on any photo below for more information.

A cool and refreshing dip that is perfect for now is this Dill Cucumber Dip. We love this recipe from All Recipes- it has only six ingredients. Whipped Cottage Cheese Dip

This Whipped Cottage Cheese Dip is a delicious dip that takes only 20 minutes to make. Running the cottage cheese through a food processor creates a creamy mixture. Tuna Salad Lettuce Cups

Tuna Salad Lettuce Cups is a fresh and easy snack for anytime of the year, especially now. This tuna recipe is Bev’s creation and we just added the lettuce leaf.

Ingredients

Albacore tuna packed in water 2-7oz. | Celery- 2 stalks chopped | 2-green onions chopped | Capers 2-TBL | Dill Relish 2-TBL | Dried Tarragon Leaves 1 TBL | Fresh Dill Chopped 2-TBL | Mayo- 5 TBL | Organic Romaine Lettuce Leaves

Instructions

Drain the tuna, place in medium dish and break up large pieces with a fork. Add celery, green onions, capers, relish, tarragon and fresh dill and mix thoroughly. Add mayo and mix through. Remove 5 or 6 Romaine leaves and rinse. Place tuna mixture in each lettuce leaf and place on a platter. Enjoy. Click on any photo below for more information.

Fruit Kabobs

Fruit Kabobs are a fresh and easy snack to prepare mid summer when our favorite fruits are in season. Strawberries, blueberries, bananas, melon, watermelon, peaches, pineapple and kiwi are great options. Place kabobs on a round platter arranged in a circle around a center bowl that contains a fruit dip or flavored yogurt. Click on any photo below for more information.

Triple Berry Smoothie

A smoothie is so refreshing any time of the day.

Ingredients

1 cup frozen strawberries | 1 cup frozen blackberries | 1 cup frozen raspberries | 1/4 cup almond milk |

1/2 cup Greek yogurt.

Instructions

Place all of the above ingredients in a mixer or vita mix and blend to desired smoothness.

Summer Fruit Crisp Ice Cream Bars

This make-ahead dessert combines two favorite treats- fruit crisp and Ice cream. Yummy!

Ingredients

2 cups flour | 1/2 cup quick cooking oats | 1/3 cup packed brown sugar | 1/8 tsp salt | 1 cup butter | 1 cup chopped pecans or walnuts | 1 gallon strawberry ice cream softened | 2 cups chopped strawberries

Instructions

Preheat oven to 400F. Chill a large mixing bowl for 15 minutes. In a separate bowl combine the flour, oats, brown sugar and salt. Cut in butter until pieces resemble coarse crumbs. Stir in chopped nuts. Pat lightly into a 13 x 9 inch pan. Bake 15 minutes or until golden. Stir to break up and cool.

Assemble

Remove half of the crumble. Spread remaining half evenly across the bottom of the pan. In the chilled bowl stir ice cream to soften and add chopped fruit. Spread evenly over crumbs and top with reserved crumbs. Cover and freeze 6 hours. Let stand at room temperature 5 or 10 before cutting into bars.

A trifle is such a fresh and versatile dessert for the summer. There are so many favorites – we landed on this one from Pioneer Woman because in the middle of summer, strawberries, blueberries and blackberries are at their peak.
